Apprenticeship:
Spring Wild Foods

10 Weeks
An introductory course to foraging wild foods, sustainability issues, and ethics. Plant and mushroom identification skills, how to harvest, process and preserve wild foods for your health and supporting the environment by focusing on invasive species. Virtual-only option available.

Field Trip Locations: Southern California
Live Virtual Classes take place on Wednesdays 7-8:30pm PST, will be recorded and accessible for current students during the course.

WINTER 2023
February – March

Course: West Coast Wild Mushrooms

6 Weeks (Hybrid course, 5 live virtual + 2 field trips)
Discover the world of wild mushrooms of the West Coast with Jess Starwood as your personal guide. This in-depth course will cover important identification skills to discern edible and deadly species, how and where to hunt for mushrooms, medicinal uses and therapies using fungi, processing/preserving mushrooms along with cooking techniques and recipes.

Live Virtual Classes take place on Wednesdays 5-6:30pm PST, will be recorded and accessible for current students during the course.

SPRING 2023
March – April

Course: Sonoran Desert

6 Weeks (5 live virtual + 1 weekend field trip)
This intensive course explores the true abundance of what seems like a scarce and arid landscape. From edible and medicinal cacti to delicious berries, medicinal plants, and ephemeral greens and the desert provides us with unusual textures and new flavors to explore in the kitchen.

Live Virtual Classes take place on Wednesdays 5-6:30pm, will be recorded and accessible for current students during the course.

September-November

Apprenticeship:
Fall Wild Foods

10 Weeks (8 live virtual + 2 in-person workshop + 1 field trip)
Fall is a time of going inward, nourishing our own roots; preserving and using the bounty of prior seasons. We will dive deeply into culinary techniques that apply to wild foods, plus creative plating and food styling to make even a “plate full of weeds” look appetizing! We will also explore foundational herbalism for foragers.
